Aunt Claudette’s Skillet Chicken Thighs

Let me tell you something about my Aunt Claudette, and about these skillet chicken thighs — the ones that finally live up to her legend. That woman could take five ingredients, a cast iron skillet, and thirty-seven minutes of determination, and produce something that would make a grown man weep into his sweet tea. She never once measured anything. She’d just look at you sideways if you asked how much garlic she used and say, “Enough, baby. Enough.” I am not Aunt Claudette — I have anxiety and a set of measuring spoons — but I have spent considerable time chasing that magic, and I am here to tell you: I found it. Right here. In this skillet.

The secret to chicken thighs is patience and a hot pan, two things I am historically terrible at. I once tried to rush a sear and ended up with chicken that looked like it had been through something. We don’t talk about that era. What we do talk about is this version — bone-in, skin-on thighs, dried until they’re practically begging for heat, then pressed into a screaming-hot skillet until that skin turns the color of a Louisiana sunset. Then we hit it with garlic, thyme, chicken broth, and a little butter at the end that is absolutely not negotiable. You will not be skipping the butter. I see you thinking about it. Stop.

These skillet chicken thighs are a one-skillet situation, which means less cleanup, which means more time sitting at the table feeling like you really did something tonight. And you did. You really did. Serve it with rice, mashed potatoes, crusty bread — anything that can soak up that pan sauce, because leaving that sauce behind would be a genuine tragedy and I will not have that on my conscience.

Skillet Chicken Thighs That'll Make You Wanna Call Your Mama

Crispy-skinned, golden chicken thighs in a pan sauce so good it'll have you on the phone apologizing to your mother for every time you said her cooking was 'fine.' These come together in one skillet in under an hour.

Ingredients
  

  • 4 bone-in, skin-on chicken thighs about 2.5 to 3 lbs total
  • 1 tsp kosher salt plus more to taste
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 tbsp neutral oil vegetable or avocado oil
  • 5 cloves garlic smashed and peeled
  • 4 sprigs fresh thyme or 1/2 tsp dried thyme
  • 1 cup low-sodium chicken broth
  • 1 tsp Dijon mustard
  • 2 tbsp unsalted butter cold, cut into pieces
  • 1 tbsp fresh flat-leaf parsley chopped, for garnish

Method
 

  1. Pat the chicken thighs completely dry with paper towels — press firmly on all sides. Dry skin is the key to crispy skin, so don't rush this step.
  2. In a small bowl, combine the salt, pepper, smoked paprika, and garlic powder. Season the chicken thighs all over with the spice mixture, coating both the skin side and the underside.
  3. Heat a 12-inch cast iron skillet or heavy oven-safe skillet over medium-high heat for 2 minutes until very hot. Add the oil and swirl to coat.
  4. Place the chicken thighs skin-side down in the skillet. Do not move them. Press down gently with a spatula for the first 30 seconds to ensure full skin contact with the pan. Cook undisturbed for 12 to 14 minutes, until the skin is deep golden brown and releases easily from the pan.
  5. Flip the chicken thighs skin-side up. Add the smashed garlic cloves and thyme sprigs to the pan around the chicken. Cook for another 10 to 12 minutes, until the internal temperature reaches 165°F at the thickest part.
  6. Transfer the chicken to a plate and loosely tent with foil to rest. Leave the garlic and thyme in the pan.
  7. Pour off all but about 1 tablespoon of the drippings from the skillet. Return the skillet to medium heat and add the chicken broth, scraping up any browned bits from the bottom of the pan with a wooden spoon.
  8. Whisk in the Dijon mustard. Let the broth simmer for 3 to 4 minutes until it reduces by about one-third.
  9. Remove the pan from heat and discard the thyme sprigs. Add the cold butter pieces and swirl the pan or whisk constantly until the butter is fully melted and the sauce looks glossy and slightly thickened.
  10. Taste the sauce and adjust salt as needed. Return the chicken thighs to the pan skin-side up, spoon the sauce over them, and garnish with chopped parsley. Serve immediately directly from the skillet.

Notes

For the crispiest skin possible, season the chicken thighs uncovered in the refrigerator for at least 1 hour before cooking — or up to overnight. The air-drying in the fridge makes a noticeable difference.
